St. Francis Splits As The Twins Pitch In




Khalil twins played their first Division 1 water polo tournament against Iona College & Siena College. Losing to Iona 15-8, with Samantha & Juliette scoring 1 each. 

The second game was a 15-11 win over Siena. Juliette scored
2 and Samantha scored 4 goals for the Terriers.


Former Boca High athlete Brianna Rotota plays for Siena scoring 1 goal.

HOW DO YOU FEEL ABOUT THE NEW WINTER LEAGUE TEAM RULES?



Yesterday the criteria of fielding a team for the winter league suddenly changed.


From SE Zone Headquarters:

"Since the league is in the middle of the school year, we will be setting all age groups based on grade rather than age. The groupings will be as follows:12th Grade and Under Boys/Girls; 10th Grade and Under Boys/Girls; 8th Grade and Under Co-ed; 6th Grade and Under Co-ed."

Why the change when the winter & summer league has always been by age? Teams have already registered for the season ergo their rosters are set for the winter schedule based on the Zones previous criteria




 

Pinto Bean Gumbo







1 2/3 cups dry pinto beans
7 cups water
1 large onion, chopped
1/2 cup diced salt pork
1/2 teaspoon salt
1 bay leaf
2 cups okra, sliced (can use frozen okra)
1 (16 oz. can) diced tomatoes
1 (16 oz. can) whole kernel corn, drained or 1 box frozen corn
2 teaspoons worcestershire sauce
1 teaspoon salt
1 teaspoon sugar
1 teaspoon dried thyme
1/2 teaspoon bottled hot pepper sauce 
   
Rinse beans.  In a 5-quart dutch oven or kettle combine beans and the water.  Bring to boiling.  Reduce heat; cover and simmer 2 minutes.  Remove from heat.  Cover and let stand 1 hour. (Or, soak beans in the water overnight in a covered pan) Do not drain.
 
Add onion, salt pork, the 1/2 teaspoon salt, and the bay leaf to the beans and liquid.  Bring to boiling.  Reduce heat; cover and simmer 2 to 2 1/2 hours or till beans are tender.  Add sliced okra, undrained tomatoes, drained corn, worcestershire sauce, the 1 teaspoon salt, sugar, thyme, and bottled hot pepper sauce.  Simmer the mixture 30 minutes or till okra is tender.  Remove bay leaf before serving.  Makes 10 servings.
 
You can also make this in the crockpot using about three cans Lucks Pinto Beans, leave out the salt pork, and add the other ingredients and cook 4 hrs. on high. Enjoy!
 
 

Easy Chicken Parmesan







INGREDIENTS

  • 8 oz uncooked spaghetti
  • 1/3 cup Progresso Italian style panko crispy bread crumbs
  • 1/3 cup shredded Parmesan cheese
  • 4 boneless skinless chicken breasts, flattened slightly
  • 2 cloves garlic, finely chopped
  • 1 can (18 oz) Progresso Recipe Starters fire roasted tomato cooking sauce
  • 1 cup shredded mozzarella cheese (4 oz)

    DIRECTIONS

    1. Cook and drain spaghetti as directed on package.
    2. In large resealable food-storage plastic bag, mix bread crumbs and Parmesan cheese. Shake each chicken breast in bread crumb mixture; set aside.
    3. In 12-inch skillet, heat 2 tablespoons vegetable oil over medium-high heat. Stir in garlic; cook until garlic starts to brown. Add chicken breasts; cook 6 to 10 minutes, turning once, until browned. Pour cooking sauce around chicken; sprinkle chicken with remaining bread crumb mixture and mozzarella cheese. Heat to boiling. Cover; reduce heat to medium. Cook 5 to 8 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F) and cheese is melted. Serve with spaghetti.
