1 cup white sugar1/2 cup light corn syrupDash of salt1 to 1 1/2 cups shelled raw peanuts1 tablespoon butter or margarine1 1/2 teaspoons baking soda1 teaspoon vanilla Spray a baking sheet generously. Combine sugar, corn syrup and salt in a 3 quart microwave bowl. Stir in peanuts and microwave on high until light brown. (About 9 to 10 minutes.) Stir twice while cooking.(This gets very hot, so be careful not to get burned and I use a glass casserole dish. Don’t use tupperware. It will melt.) Stir in remaining ingredients. Mixture should be light and foamy. Quickly spread as thin as possible on greased baking sheet. Let cool and break into pieces. Makes about 1 pound of peanut brittle. Enjoy!

EASY CHOCOLATE FUDGE
1/3 cup evaporated milk or can use heavy cream1/3 cup light corn syrup2 cups semi-sweet chocolate chips1 teaspoon vanilla extract1 cup powdered sugar1/2 cup nuts or more (I used walnuts) Grease an 8 x 8 pan with butter or margarine. Combine milk and syrup and bring to a boil. Boil 1 minute. Turn heat to low, add chips stirring constantly until melted. Remove from heat and add vanilla, powdered sugar and nuts. Stir with spoon till smooth. Pour in pan, cover and refrigerate until set, one to two hours. Makes about 30 small pieces of fudge. Enjoy.
